Thinking of the autumn-winter weather, a cheese, black cheese, was created on a beautiful, sunny summer day.
But as always, even in the darkest night there is light. Even a crescent moon.
Or a momentary ray of sunshine in our shortest day. So too, black cheese has yellowish streaks of syrup – the fragrant citrus peel of Peninuki Distillery.
The cheese tastes like Andre cheese. It smelled of a citrus bouquet, tasted of citrus.
The cheese turned black from white milk thanks to ash.
Matured for 3 months.
