Honey is a high-sugar, mostly sweet food product produced by domesticated bees from nectar or secretions collected from plants by adding specific substances and ripened in honeycombs.
Fresh honey usually contains over 80% sugars (mainly glucose and fructose) and less than 20% water. A small amount of water cannot keep such a large amount of sugar liquid for long under normal storage conditions. Therefore, glucose, which is poorly soluble in water, begins to crystallize, while fructose, which is highly soluble, does not. The rate of crystallization depends primarily on the storage temperature and the proportion of glucose in honey. The process occurs very slowly when the temperature of the honey is above 25 °C. The most intense crystallization occurs at temperatures of 10…15 °C. Below 10 °C, the viscosity of honey increases, which slows down the formation and spread of crystals.
In addition to water, honey mainly consists of two sugars: glucose and fructose. In addition, honey also contains other sugars and small amounts of minerals, vitamins, amino acids, and antioxidants.
