The color comes mainly from black garlic, which is obtained by cooking garlic at a low temperature and at a certain moisture percentage. Garlic made in this way is carbon black and has a slightly sweet, syrupy taste.
Putting a clove of black garlic in mustard produces a product with a very special taste, which goes perfectly with cheese, animal meat.
